Good Bread is a dedicated gluten-free micro-bakery in Tilburg, offering fresh, organic sourdough bread and other baked delights. We specialize in small-batch baking, where every loaf is naturally leavened and long-fermented to break down anti-nutrients, making our bread gentle on digestion while enhancing its flavor. The result? A beautifully soft interior, a perfectly crunchy crust, and a loaf that truly nourishes.
Our mostly plant-based assortment of breads takes people back to the way real food was meant to be enjoyed - pure, simple, and crafted with care (yes, we go the extra mile to remove those pesky defense chemicals - also known as anti-nutrients - before our bread reaches the oven!)
We hope that every bite brings comfort and a sense of community, inspiring people to support local businesses and savour thoughtfully made, wholesome goods in their own neighbourhoods.

Our Humble Story
Born from our community, fueled by love for real bread.
Most gluten-free bread from the supermarket? Let’s be honest — it’s often a sad, flavorless sponge packed with mystery ingredients. And commercial yeast? This “new kid on the block” (just 100 years old!) disrupts both flavor and digestion. Add in decades of tinkering with wheat genetics, and it’s no wonder gluten intolerance is on the rise. Instead of nourishing us, these shortcuts leave our bodies confused and cranky — especially for those navigating the gluten-free world.
Why we do things differently
At the end of last year, we — Klaudiusz and Barbara — began a simple gluten-free sourdough experiment. The results blew us away. Inspired by the magic of wild fermentation, our kitchen (and, truthfully, our living room too!) became a cozy micro-bakery. And just like that, Good Bread Bakery came to life.
Our mission
We want to change the way people see gluten-free bread — to prove it can be delicious, nourishing, and full of character. No commercial yeast. Just good bacteria, slow fermentation, and pure ingredients that support happy bellies and thriving gut flora.
We strive to use organic ingredients from regenerative farms whenever possible, because caring for our planet is as important to us as caring for our health.
Growing together
Even as we’re still perfecting our craft, the aroma of our sourdough has already drawn a wonderful crowd right down the road from our little house. We’re beyond grateful for the love and enthusiasm surrounding this journey — and for the chance to blend tradition with innovation in every loaf.
